When you run a bar, surely one of the perks is being able to create your favourite flavours in gin form?!
Well this is Katy's Key Lime, using all the ingredients of Katy's favourite Key Lime Pie in distillation, to create a spirit more tasty than the American dream.
First the biscoff is soaked in the gin, which is then distilled with botanicals including lemon thyme and dandelion. Finally, lime zest is steeped in the gin for several days. In every sip, you certainly get a piece of the pie.
